Fishtaco

This is such a good and simple dish that it may become your new favorite at the dining table. The salsa is easiest to make entirely at home, while salmon and tortillas can be prepared at home but are preferably cooked over a fire in the forest.

The salsa can be made into two versions. Either you make it super simple and good or you make it simple and super good. Below are recipes for the super tasty variant. If you would rather make the super simple variant, use regular sweet chili sauce in a bottle.

Ingredients
Salsa
● 4 tomatoes
● ½ cucumber
● 1 pepper
● 1 red onion
● 1 mango
● 2 cloves garlic
● 1 chilli
● 2 tablespoons syrup or honey
● 1 lime
● 2 tablespoons water
● 1 tablespoon olive oil
● Salt and pepper
● Peanuts and coriander for serving

Salmon
● 500 g Salmon
● 2 tablespoons olive oil
● 0.5 tbsp cumin
● 0.5 tbsp chili powder
● 1 teaspoon paprika powder
● Salt and pepper

Do it like this:
Start with the sweet chili sauce by chopping the garlic and chili (take a little less than the whole chili if you want it less strong). Put the pieces in a mortar and mash together. Mix the chili and garlic with oil, water and syrup. Taste with salt and pepper and possibly a little pressed lime. It should taste good so do not be afraid to salt and add a little extra garlic and chili if it does not sing in the mouth.

Now let the sauce stand for a while, while you chop the rest. Divide each tomato into 4 parts and pick out the seeds (the entire contents) then chop the tomato flesh into small cubes and place in a bowl. Peel the cucumber and pepper and dice them as well as finely chop the onion and put it in the bowl as well. Peel the mango and dice it into slightly larger cubes than the other vegetables. Mix in the mango and the sauce in the bowl and stir. Taste and keep in mind that if the salsa is left for a while before you eat it, it will increase in taste.

The salmon itself, you only need to peel and dice into 2-3 cm pieces before you go out into the woods. Feel free to put the salmon in a resealable bag. Mix all the ingredients for the marinade and pour into a jar. 30 minutes before it is time to throw the salmon on the fire, pour the marinade into the bag of salmon and massage in so that all the pieces get a good taste. Pour the contents of the bag onto the frying pan and fry so that it gets a nice color but stays juicy and good inside.

Serve the salmon in a freshly baked tortilla bread with salsa and sprinkle with crushed peanuts and chopped coriander. Have a nice meal!
