The tradition of tapping birch sap is very old in Sweden. However, the knowledge of fermenting birch sap into a bubbly, refreshing non-alcoholic beverage is derived from Eastern Europe
Ängabackens Birch Soda is a small-scale and artisanally produced non-alcoholic drink made from pure birch sap, crafted on a farm in Sonarp, Småland. It is early spring, just as the frost has left the ground, that the sap rises in the birch trees. We then tap the sap slowly, drop by drop, from the birches in Ängabacken. The sap is collected in bags that are emptied every morning for further transport to tanks on the farm.
Ängabackens Birch Soda is aged in a root cellar for at least a year. The result is a non-alcoholic, dry, softly sparkling beverage. With its freshness and genuine flavor, birch soda pairs well with meals, serves as a welcome bubbly, and can also be used in exclusive cocktails.
